“…However, when fermentation temperature was maintained at 12.5 ° C, strain 790 expressed the genes ILV2, LEU4, LEU9, BAT1 responsible for the incorporation of valine and leucine for the biosynthesis of isoamyl acetate.The result with the strain 820 was different, showing overexpression of five genes of alcohol dehydrogenase, ADH1, ADH3, ADH4, ADH5 and SFA1 responsible for catalyze the final step in the formation of the alcoholic compounds derived from branched amino acids.Another gene was overexpressed was the ATF1, which is expressed in both strains, suggesting that when fermentation starts at relatively high temperatures, and then decreases, there is an increase in the production of esters which affects the activity of AATase. …”
