    “…Obtaining bioactive peptides from the extensive and sequential enzymatic hydrolysis (using Alcalase and Flavourzyme) of protein isolates obtained from defatted flours of amaranth, quinoa and chia, turns out to be an interesting strategy for the use of these residues, which may have beneficial effects on some physiological function. To evaluate the antioxidant activity three tests were performed: the ability to sequester the radical DPPH, according to the method of Wu et al., (2003) by spectrophotometry at 517 nm; discoloration of β-carotene according to the method of Miller (1971) using a 96-well microplate reader at 470 nm and 45 ° C at 0, 30, 60, 90, 120 and 150 minutes; and the determination of reducing power, according to the method of Oyaizu (1986) by spectrophotometry at 700 nm; on the other hand, to evaluate the antihypertensive activity, an assay was performed to determine the peptides with inhibitory capacity of the angiotensin converting enzyme, according to the method of Santandreu and Toldra (2006) using a fluorescence reader in microplates at 420 nm. …”
